In you card payment settings of your store you have a list of payments valid for Ireland, if you keep scrolling down it says Others and a lot more options come up. You select stripe, follow the steps and then you can choose between Canada, Ireland, United states and United Kingdom. That didnt work for me in Spain because is in Beta so I had to follow the other steps I described above. It should be even easier for you in Ireland.
